Quick answer

Why must the cáo giỗ rite be held before the main death anniversary day?

According to the book Văn khấn cổ truyền Việt Nam, for a major death anniversary (that of a grandfather, grandmother, father, mother, wife or husband), one day before the anniversary a cáo giỗ rite is needed, also called the ngày tiên thường. The cáo giỗ rite announces to the deceased that the following day they are invited to receive the offerings, and also informs the Thần linh and Thổ địa at the burial place, as well as the Công thần Thổ địa at home, to permit the soul of the deceased to return and receive the offerings.
